Strawberry and orange spritz
Ingredients
- 30ml citrus vodka
- 1/4 tsp rosewater
- 100ml dry prosecco
- Pared orange zest, to garnish
- 200g strawberries, thinly sliced
- 200g caster sugar
- 200ml white wine vinegar
- 11/2 tsp finely grated orange zest
How to make
- For the strawberry and orange syrup, place the strawberries and sugar in a bowl, and toss to combine. Cover and refrigerate for 2 days, stirring the mixture once a day. Add vinegar and orange zest, then return to the fridge for 1 week. Strain and refrigerate until ready to use.
- To make the spritz, combine the vodka, rosewater and prosecco in a wine glass filled with ice. Add 15ml strawberry and orange syrup, and stir. Twist orange zest to release oils and add to cocktail to garnish.
Fruity Summer Cooler
Ingredients
- 8 strawberries, plus extra sliced strawberries to serve
- 1/2 cup (125ml) sweet red vermouth (see note)
- 1/2 cup (125ml) gin
- 1/3 cup (80ml) Cointreau or other orange liqueur
- 1 orange, thinly sliced
- 1/2 Lebanese cucumber, sliced
- Handful of mint leaves
- 700ml lemonade, chilled
How to make
- Whiz the strawberries in a blender to a puree. Strain the strawberry puree through a sieve, pressing down with the back of a spoon to extract as much juice as possible, then return to the blender with the vermouth, gin and liqueur, and pulse to combine.
- Fill a large jug with plenty of ice, then add orange slices, cucumber, mint and extra strawberries. Pour in the gin mixture, then top up with lemonade. Serve in chilled glasses.

Kiwi, Lime and Mint Cooler
Ingredients
- 1/2 cup (110g) caster sugar
- 1/2 cup (125ml) boiling water
- 4 gold and 4 green kiwi fruit
- 1/3 cup (80ml) lime juice (from 3-4 limes)
- 1/2 cup mint leaves
- 2 cups ice cubes
- 1 cup (250ml) sparkling wine or sparkling water
How to make
- In a large jug, dissolve 1/2 cup (110g) caster sugar in 1/2 cup (125ml) boiling water, then place in an ice bath or fridge to chill. Peel and roughly chop 4 gold and 4 green kiwi fruit, then blend until smooth with the cooled syrup, 1/3 cup (80ml) lime juice, 1/2 firmly packed cup mint leaves and 2 cups ice cubes. Pour into a jug and top up with 1 cup (250ml) sparkling wine or sparkling water, or divide among glasses and top up with wine or water. Serve with extra mint.

Champagne cocktails
Ingredients
- White sugar cubes
- Angostura Bitters
- Chilled champagne
How to make
- Dip white sugar cubes into Angostura Bitters until they absorb the bitters and change colour. Place cubes into champagne flutes. Top with chilled champagne.
Vodka sorbet shots
Ingredients
- 750ml lemon or lime sorbet
- 3 cups (750ml) vodka
How to make
- Place 24 shot glasses in the freezer for 1 hour until chilled. Place a small scoop of sorbet into each shot glass, then pour 1 shot (30ml) vodka over each. Serve immediately with small spoons.
